We had a hard time deciding whether or not we wanted to create a “Texas” Boudin.  We catch a little bit of grief from the Cajuns that visit the store but we had so many requests for Boudin with Jalapeno’s that we had to give it a try.  So to make a long story short, we added jalapeno’s to our Boudin recipe and called it Texas Boudin.  (When in Rome…)  It didn’t take long to catch on and sells almost as well as our traditional boudin.
