Pork, pork liver and vegetables browned and cooked for hours.  Seasoned, shredded, mixed with rice and then cased like a sausage.  When people ask what Boudin is, I usually respond, “it’s the taco of louisiana” because you can find it just about everywhere in Louisiana  just like the good ‘ol taco in Texas.  It’s can be eaten for every meal and is about as authentically Cajun as Cajun food gets.
